Step-by-step preparation
Cooking time: 7 hr
STEP 1
Soak the beans for 4 hours in cold water. Place goose meat, beans, bay leaf and peppercorns on the bottom of the pan. Pour in cold water. Let simmer for 2 hours.
STEP 2
Cut the carrots into thin semicircles. Cut the onion into cubes.
STEP 3
Finely chop the garlic. Cut the goose fat into pieces and melt in a frying pan.
STEP 4
Remove the cracklings and fry the onions, carrots and garlic in the rendered fat.
STEP 5
Cut the potatoes into cubes and add to the broth. Remove the meat and cut into cubes. Put back into the pan. When the potatoes are ready, add the frying, salt, pepper and sprinkle with chopped herbs. Let it simmer for 5 minutes.
STEP 6

Goose...Goose..What??. This soup evokes thoughts of something rustic, and therefore something solid, rich and satisfying. I would say a man’s soup! An interesting addition to our traditional soups.
