    Soak the beans for 4 hours in cold water. Place goose meat, beans, bay leaf and peppercorns on the bottom of the pan. Pour in cold water. Let simmer for 2 hours.

    Cut the carrots into thin semicircles. Cut the onion into cubes.

    Finely chop the garlic. Cut the goose fat into pieces and melt in a frying pan.

Goose...Goose..What??. This soup evokes thoughts of something rustic, and therefore something solid, rich and satisfying. I would say a man’s soup! An interesting addition to our traditional soups.
