  1. STEP 1

    STEP 1

How to bake potatoes with pumpkin? Prepare the products according to the list. Wash the vegetables thoroughly, preferably with a brush under running water. Then dry it. You can use any cheese you like. For me it's Russian.

  2. STEP 2

    STEP 2

Peel washed vegetables: pumpkin, potatoes, onions.

  3. STEP 3

    STEP 3

Cut the pumpkin into flat rectangles, the potatoes into thin circles, and the onion into thin rings. Place all vegetables in a large bowl.

  4. STEP 4

    STEP 4

Salt the vegetables, pour in sunflower oil, add Provençal herbs. Mix well. If desired, you can add a clove of garlic crushed through a press to the vegetables.

  5. STEP 5

    STEP 5

Turn on the oven to preheat at 180C. Grease a baking dish with vegetable oil or use a non-stick pan. Place the vegetables in the pan, alternating them, to make the finished dish more beautiful.

  6. STEP 6

    STEP 6

Scatter pieces of butter on top. If you want to get a lean dish, then use only sunflower oil. To do this, sprinkle the vegetables with it.

  7. STEP 7

    STEP 7

Sprinkle everything with grated hard cheese. Place in an oven preheated to 180 degrees for an hour and a half, covering the top loosely with foil. For more accurate times, refer to your oven!

  8. STEP 8

    STEP 8

When the potatoes are ready, remove the foil and bake the dish a little more if desired. But the cheese will melt under the foil. To prevent it from becoming a hard crust, you can cover the potatoes and pumpkin with a mayonnaise mesh before it, but this is optional. Not everyone likes mayonnaise.

Great side dish! I like to bake potatoes in a sleeve with eggplants, bell peppers, and tomatoes.

I cooked baked potatoes with pumpkin in the oven. Peeled and cut potatoes, onions and pumpkin. I put them in a bowl, salted and peppered them, added vegetable oil, finely chopped garlic cloves and dried herbs, and mixed. I placed the vegetables in a circle in a mold and placed a few pieces of butter on top. Cooked in a heatproof saucepan with the lid closed. About 10 minutes before the end of cooking, I removed the lid and greased it with mayonnaise. I didn’t sprinkle cheese on the vegetables. It turned out very tasty. I liked this recipe and the result.

I really liked the side dish, it was spicy and the vegetables complemented each other. I baked everything under foil for 45 minutes and added cheese without foil for 15 minutes. Thanks for the recipe!)
