Baked honeysuckle soufflé
This light dessert is good warm or cold. Unfortunately, all good things come to an end, so there was nothing left from the harvest of my favorite honeysuckle. As a finishing touch, I decided to make this light soufflé.

Ingredients
Step-by-step preparation
STEP 1

Prepare the ingredients.
STEP 2

Wash and dry honeysuckle. Grind the berries with a blender.
STEP 3

Place berry puree and powdered sugar in a saucepan. Mix.
STEP 4

Boil, stirring, over low heat for 6-7 minutes until the mixture thickens slightly. Remove the saucepan from the heat and cool to room temperature.
STEP 5

Beat the whites with salt into a strong, stable foam.
STEP 6

Gently fold the beaten egg whites into the cooled berry puree.
STEP 7

Place the resulting mass into individually greased baking pans.
STEP 8

Bake for about 20 minutes at 180°C. Do not open the oven during baking, otherwise the soufflé will settle.
STEP 9

Remove the finished soufflé from the oven, sprinkle with powdered sugar and fresh berries and serve immediately while warm.

Thank you very much for the recipe, everything turned out very tasty. I made it according to your recipe and replaced sugar with honey, it also turned out delicious, but the soufflé increased in volume a little less.
