I wanted to cook bacon myself at home so that I could use it to prepare various dishes. To do this, I took lard with streaks of meat. I prepared the salting mixture. I added red hot pepper to the salt instead of black, chopped the bay leaf a little, and took allspice for more flavor. I also cut the garlic into petals. The pieces of bacon were salted for three days in the refrigerator, during which time I turned them over once. During this time, the bacon became tougher, and the salt drew out excess water. After that, I washed off the salt, wiped it with a paper towel and put it in the freezer. After lightly freezing, the bacon was easily cut into thin slices. The bacon turned out to be quite soft, although the meat turned out to be tougher than lard. The bacon tastes slightly spicy and moderately salty. The aroma is wonderful! I will use it for sandwiches, and you can also fry the plates along with scrambled eggs or potatoes.
