STEP 1

How to make homemade bacon? Prepare the ingredients according to the list. The part of the pork carcass for bacon must be of ideal quality - only in this case you will get truly delicious bacon.
STEP 2

Take a piece of brisket suitable for cooking bacon, cut off some of the fat with layers from it - this is exactly the kind of bacon we will cook today.
STEP 3

Cut the pork into pieces suitable for salting. I have these square pieces. You can make them narrow and oblong so that you can then cut them into “standard” thin pieces of bacon.
STEP 4

How to brine bacon at home? Prepare the curing mixture. To do this, take a suitable deep and wide dish. Add coarse salt to it. Cut the peeled garlic into petals or pass through a press. Add garlic to salt, add spices. Mix everything well.
STEP 5

Now roll the sliced pork pieces on all sides in the prepared salt mixture. Place a weight on top of the meat and put it in a cool place for three days for salting.
STEP 6

During these three days, turn the lard under pressure a couple of times so that the resulting brine penetrates evenly into the bacon.
STEP 7

After three days, homemade bacon is ready. Rinse off excess salt, pack in a plastic bag and store in the freezer, cutting into slices or cutting into small pieces as needed.
