During the season of cheap ripe apricots, I advise you to prepare marshmallows instead of jams and compotes - this is not at all difficult to do at home. For apricot marshmallow you only need two ingredients. It turns out not only tasty, but also budget-friendly.

    How to make apricot marshmallow at home? Prepare the necessary products. You only need two ingredients: apricots and sugar. You can make it without sugar at all, but it will be sour. You can use honey instead of sugar.

    Wash the apricots well, sort through, selecting spoiled and unripe fruits. Then remove the pits by breaking each apricot in half. It's quick and not at all difficult.

    Next, the fruits need to be chopped. You can use either a meat grinder or a blender. You should get a puree like in the photo.

    You can skip this step, but I still recommend doing it. Grind the resulting puree through a sieve. This will take some time, but it will rid your future marshmallow of hard inclusions of cake.

    Add sugar or honey and mix well. At this stage, you can add chopped nuts or any other additives to taste.

    Cover a baking sheet or other dish in which you plan to dry the marshmallow with oiled parchment. If you have a silicone mat, you can use that instead of parchment paper. Pour the puree over it and smooth it out with a spatula. You should try to make the layer thin and even so that the marshmallow dries evenly.

    Next, you need to put the marshmallow in the oven to dry at 60 degrees with the door ajar. This took me three times, three hours each. I dried it intermittently, only in the evening. It may take you less time. Check for readiness by looking at the pastille; it will become glossy and hard to the touch.

    Cut the finished marshmallow into strips; I did this directly with scissors. Separate the pastille from the paper and roll it into tubes. You can leave it flat, it’s a matter of taste. Such live marshmallows should be stored in a closed glass container, preferably in a cool place. Enjoy your tea!

Everyone in our family loves marshmallows. I don’t even know how long it can be stored, because it’s eaten instantly) Of course, this is labor-intensive and time-consuming, but it turns out to be a healthy treat. The easiest way to make pastille is from apricots; the seeds can be removed without problems and the pulp is well crushed. I always boiled apricots, but it turned out that you can just puree them with a blender! This saves so much effort and time) I also liked this recipe because it calculated the exact amount of product for a large baking sheet. The marshmallow ended up being the perfect thickness! This time I accidentally discovered a new way to smooth the surface of apricot puree. Previously, I smoothed it out with a spoon or a cream spatula. And this time I came across a flexible cutting board, it is very thin. I just leaned it against the surface and moved it one way, then the other. A perfectly flat surface is ready! Sorry, I accidentally deleted this photo. I dried the pastille 4 times for two to three hours, allowing it to cool completely. It turned out to be the same thickness and very flexible.
