Apples without sterilization

    How to prepare apples for the winter without sterilization: take sweet and sour apples of approximately the same size, drinking water from the tap (we will boil it), sugar and citric acid. The weight of apples in the ingredients is indicated without cores, in peeled form, prepared for harvesting. This amount of ingredients is designed for a half liter jar. If you plan to prepare more, simply increase the quantity of all ingredients and jars accordingly.

    Wash apples without scratches or bruises under running water and cut each into four parts. Using a small sharp knife, remove the stacks and seed cores. You can also prepare apples in halves. It will just be easier to put the quarters into jars.

    Wash the jars with a brush and baking soda. Place the apple slices quite tightly to each other, trying to occupy the entire usable volume of the jar.

    Boil plain drinking water in a kettle or saucepan and pour it directly into the jars. You only need to pour boiling water into the center, directly onto the apples, and not directly onto the glass. This is necessary to ensure that the jar does not burst due to strong temperature changes.

    Cover the jars with lids and leave at room temperature for twenty minutes. During this time the apples will have time to warm up well.

    Then pour the water from the cans into a saucepan or saucepan and place over medium heat. The apples remain in the jar. Bring water to a boil and add sugar. Boil for another three minutes, stirring constantly until the sugar melts. The syrup is ready.

    Pour the boiling syrup back into the jars, remembering that you should always pour boiling water into the center. Add citric acid directly to the jar and immediately seal the lid. Rotate the jar a little around its axis so that the citric acid is evenly distributed inside. This should be done using a potholder so as not to burn your hands. Wrap the jars in a terry towel and leave to cool at room temperature.
