Cut two kilograms of young eggplants into discs from one and a half to two centimeters thick.

Place the sliced eggplants into a large bowl.

Add half a tablespoon of salt to the bowl with eggplants, then a mixture of black and red peppers to taste and mix well.
STEP 5

Pour a little vegetable oil into the frying pan, then heat it on the stove and lay out the first batch of eggplants to fry.
STEP 6

Fry the eggplants on both sides until golden brown, then transfer them to a deep bowl.
STEP 7

Finely chop four hundred grams of dill, parsley, basil and cilantro.

Place the finely chopped greens in a deep bowl.

Add one tablespoon of sugar to the bowl of greens.
