Lula kebab is a traditional dish of Caucasian cuisine. It is a cutlet made of chopped meat, fried over an open fire. Fatty pork, beef or lamb is passed through a meat grinder, and then kneaded with hands for a long time, making maximum effort. This is necessary so that the minced meat sticks together well and does not fall apart during the sculpting process, does not fall off the skewer and does not spread on the grill. Then the mass is sent to the refrigerator, after mixing with a large amount of finely chopped onion and seasonings. It should marinate well in its own juice and be saturated with the aroma of spices.
