Azu in Tatar
Find classic and alternative versions of basic recipes on the web project for the harmony of benefits and taste bestrecipes24.com. Try to cook all kinds of meat and vegetables. Feel free to add aromatic herbs and spices. Serve the meat delicacy with various side dishes.
The essence of the basics is pieces of meat cooked in a spicy gravy with vegetables and herbs. Typically, the traditional recipe uses beef, lamb or horse meat. However, turkey flesh is also perfect for preparing this Tatar dish. It will not lose any amount, neither in taste nor in satiety, but it will turn out to be more dietary and less caloric. It should be noted that one of the subtleties of preparing azu is the separate frying of the components. And only at the end do they come together to simmer together in sauce and spices.
Interesting recipe: 1. Cut the turkey flesh into small pieces.2. Peel and cut the potatoes as for making French fries.3. Chop the peeled onion into thin half rings. Coarsely grate the pickled cucumbers.4. Chop the garlic.5. Finely chop the greens.6. In a large frying pan (you can use a wok or cauldron), fry the onion until golden.7. Add tomato paste and, stirring, cook for 5 minutes.8. In a separate frying pan, fry the turkey meat until golden brown.9. Transfer it to the main pan on top of the onions.10. In the same frying pan where you cooked the meat, fry the potatoes until crispy and golden brown.11. Place it on the turkey.12. Fry the grated pickles a little.13. Cover the potatoes with them.14. Pour in broth.15. Season with garlic, herbs, salt and spices.16. Simmer covered over low heat for 25-30 minutes.17. Serve with any side dish.
Helpful tips:• Instead of tomato paste, you can use tomato juice, fresh finely chopped tomatoes or tomato puree.• It is advisable to choose salted cucumbers for the basics, not pickled ones.• The most delicious dish will be if you use ghee for frying the ingredients.
