STEP 1
How to make a thick custard for leveling a cake? Prepare the necessary products. Remove the butter from the refrigerator in advance so that it becomes soft.

In a small saucepan, combine sour cream and egg. Add sugar. Mix everything until smooth.
STEP 3
Then add flour and vanilla. Mix the whole mass with a whisk so that there are no lumps of flour left in it. Place the pan with the cream in a water bath with boiling water and heat the mass while constantly stirring.
STEP 4
When heated, the cream will become thicker. It must be stirred constantly so that it heats evenly. When the cream thickens, remove the pan from the water bath. Cover the cream with cling film and cool to room temperature.
STEP 5
When the cream has cooled, beat the butter, add the cream to it, beat everything together a little again so that the mass becomes more uniform
STEP 6
The finished cream is very soft, delicate and holds its shape perfectly. It can be used to layer cakes and pastries and to line the top and sides of a cake. Using a pastry spatula, spread the cream onto the surface of the cake and smooth it out.
