Strawberry wine
Ingredients
Step-by-step preparation
STEP 1
How to make strawberry wine from strawberries at home? Prepare the necessary ingredients. Strawberries for wine must be selected that are ripe and without signs of rot. There is no need to wash the berries or remove the stems.
STEP 2
Mash all the berries with your hands into a suitable fermentation container. The selected container should be approximately 3/4 full to prevent the wort from overflowing during fermentation. Close the container tightly with a lid to prevent insects from crawling in or any debris from getting in, and leave it for 3-4 days at a temperature of 18-23 degrees. After the specified time, mix the wort thoroughly. Leave it for about 2 more weeks. Stir the wort every 2-3 days.
STEP 3
Before you begin removing the pulp from the wort, you must leave it alone for one day. Under the pressure of carbon dioxide, part of the wort will rise to the surface.
STEP 4
Place the pulp on a fine sieve or canvas bag and leave it over an empty container for several hours to allow the remaining juice to drain.
STEP 5
Pour all the juice into a jar of suitable size.
STEP 6
Place the juice under a water seal for further fermentation for 8-10 days.
STEP 7
After this time, remove the water seal, remove the raised pulp and squeeze it out lightly.
STEP 8
Strain the future wine through a sieve from the remaining pulp.
STEP 9
Lightly squeeze out the pulp and pour it back into the jar under a water seal for 8-10 days.
STEP 10
During this time, sediment will form in the jar of wine.
STEP 11
Using a long elastic tube, carefully drain the wine without touching the sediment. And again put the wine under a water seal for 10-12 days.
STEP 12
Filter the wine and place it under a water seal until it changes color.
STEP 13
Now is the time to begin the process of aerating the wine. To do this, during the next filtration, you need to hold the tube with the exiting stream approximately 5 cm above the jar. This will saturate the wine with oxygen.
STEP 14
It's time to take a wine sample. If the sweetness from the strawberries is not enough and the wine is sour, then add a third of the sugar. To do this, dissolve it in a small amount of wine.
STEP 15
Pour the sweetened portion of the wine back into the jar. Add the rest of the sugar in parts during subsequent filtering and aeration.
STEP 16
Continue filtering and aerating until the wine becomes clear and no more sediment or deposits appear. This process is quite long and takes from two months or longer, depending on the conditions and characteristics of fermentation. Pour the finished wine into bottles, but do not cork - strawberry wine tends to ferment. Store wine in a cool, dark place. Enjoy the aroma and taste! Enjoy your tasting!
