STEP 1
How to make strawberry jam for the winter? Prepare the necessary ingredients, there are only two. Take sugar and strawberries in equal proportions. If you still decide to make jam with thickeners, then the amount of sugar can be reduced. The strawberries you use for jam should be well ripe, but not soft. Sort it through, remove spoiled berries and sepals, rinse under running water, and place in a colander to drain.
STEP 2
Grind the strawberries into a puree. This can be done using a blender, meat grinder or food processor. However, when the berries interact with the metal parts of these devices, oxidation from the strawberry juice may occur. You can crush the berries with a wooden masher or rub them through a sieve. The second method is more labor-intensive, but the jam will be thicker, more homogeneous and more delicate in consistency.
STEP 3
Aluminum cookware should not be used to make strawberry jam. Since during the cooking process, an oxidation process will occur, as a result of which harmful chemical compounds will enter the jam. Enameled cookware is suitable. Pour strawberry puree and sugar into it, stir. Put it on fire. Bring the mixture to a boil and cook for exactly five minutes over low heat. Remove the foam that has formed on top with a slotted spoon.
STEP 4
Then remove the container with strawberry jam from the heat, leave it to cool at room temperature, covering it with a paper napkin to prevent foreign bodies and dust from getting into it. After eight hours, put the jam on the fire again, bring to a boil and cook again for five minutes. Stir the jam periodically to prevent it from burning to the bottom of the pan. Also skim off any foam that forms. Otherwise, it will affect the color, taste and shelf life of the jam.
STEP 5
Prepare the jars in advance. Wash them with baking soda in running water. Place them, still wet, neck down on the oven rack. Turn on the oven to 150 degrees. Sterilize 0.5 liter jars for 10 minutes. Wash the lids, boil and dry. If you wish, you can sterilize the jars by steaming or in the microwave. Place the hot jam into the jars, roll up the lids, turn them upside down, wrap them in a blanket and let cool completely.
STEP 6
Store cooled jars in a cool place. Fragrant strawberry jam is perfect for drinking tea on winter evenings with your family. It can also be used for making desserts and baking. Bon appetit!
