Delicious Japanese hot sauce for rolls and sushi! Very interesting sauce. Olga, how is Japanese mayonnaise different from regular mayonnaise? I’ve never heard of Japanese mayonnaise before

Ready-made Japanese mayonnaise is sold in specialized stores or in supermarkets in the same department where everything for sushi is. It looks almost the same, but the smell and taste are slightly different. The preparation technology is the same as for regular mayonnaise, but instead of lemon juice or vinegar there is rice vinegar, instead of mustard there is wasabi (although I’m not sure that store-bought mayonnaise contains wasabi, just like in regular mustard there is not always mustard, only in Provençal). And I also add a little light miso paste, it gives it a characteristic smell.
