    How to make sour cream with cherries? Prepare all the necessary ingredients. First, soak the required amount of gelatin in cold water. Stir it so that there are no lumps and leave for 20 minutes for the gelatin to swell.

    Cherries can be used either fresh or frozen. Wash fresh cherries and remove the pits. For frozen cherries, remove them from the freezer and defrost. There is no need to drain the liquid.

    Place the cherries along with the extracted juice in a deep bowl so as not to stain the table. Lightly chop the cherries with an immersion blender. It is not necessary to get a homogeneous mixture; let small cherry pieces remain. Add sugar to the chopped cherries and heat until hot.

    Then add the swollen gelatin to the hot cherry and stir until it dissolves. Cover the hot cherry-gelatin mass with cling film and leave to cool to room temperature.

    When the cherry mass has cooled, beat the chilled sour cream with powdered sugar. Use high fat sour cream. Otherwise, it simply won’t beat and will remain in a liquid state. Start whipping at low speeds so that the sugar initially dissolves in the sour cream. Then turn the mixer on at full power and beat until you get a fluffy, fluffy cream. At the beginning of whipping, the sour cream will become liquid, but then it will begin to gain volume and thicken.

    Add a few spoons of whipped sour cream to the cherry mixture. Mix with a whisk. Then add more and stir again. With such constant intervention, the mass will remain fluffy.

The other day I was emptying the freezer of supplies and at the same time prepared sour cream with cherries. As indicated in the recipe, I did not drain the juice after defrosting; I used a blender to break through the pulp with it, but I did not achieve a smooth mass, leaving pieces behind. Then I boiled and melted the gelatin. I had 25% sour cream, but I didn’t have the strength to beat it, so I immediately mixed it with the warm cherry mass. In principle, everything is done quickly, it’s convenient. I poured the future cream into bowls and put it in the refrigerator to harden for two hours. Thanks to the small amount of gelatin in the composition, it turned out to be a cream and not a jelly. Very soft and airy. The heavier pieces of cherries settled to the bottom, and a beautiful soufflé cap formed on top. I really like the combination of sour cream and cherries, such a pleasant delicate taste with sourness) A wonderful gourmet dessert!
