STEP 1
How to make a sour cream pie? Prepare the necessary ingredients. You can use sour cream with a fat content of 15% or higher. Keep in mind that different manufacturers of sour cream with the same fat content may have different moisture content, so you may need more or less flour. Some manufacturers make 15% sour cream dense, while others make it fluid. Fat content also affects the final amount of flour. The recipe gives a calculation for sour cream of 15% medium thickness. Combine the eggs with sugar and vanilla sugar and beat with a mixer into a fluffy, stable foam. If the eggs are small, take 5 pieces.
STEP 3
Add sour cream to the eggs and beat again until smooth. I added sour cream with a fat content of 15%.
STEP 4
Sift the flour with baking powder and add it to the dough in parts, beating it with a mixer at low speed so as not to precipitate it.
STEP 5
Do not add all the flour to the dough; look at the consistency: it should be semi-thick, fluid and quickly drain from the beaters. In a properly prepared dough, small bubbles will appear on the surface.
STEP 6
Line the bottom of the baking pan with parchment. Grease the bottom and walls with butter. Pour the sour cream dough into the mold and smooth it out. Bake the pie for about 40 minutes in an oven preheated to 180°C until golden brown. I have a mold with a diameter of 16 cm. If your mold is larger in diameter, then you need to bake the cake for less time, because it will bake faster. During baking, do not open the oven for the first 25-30 minutes, as the dough will be very hot
STEP 7
Remove the finished cake from the mold and leave to cool. Then transfer to a plate. If desired, sprinkle the pie with powdered sugar, then cut into portions and serve. Bon appetit!
