  1. STEP 1

    STEP 1

From this recipe you will learn how to bake quick kefir pies in the oven. We will need these products for the test. You can use any filling you like.

  2. STEP 2

    STEP 2

Heat kefir and butter until warm.

  3. STEP 3

    STEP 3

    Add sugar, salt and mix.

  4. STEP 4

    STEP 4

Mix the yeast with flour (be sure to sift the flour) and add to this mass. If the yeast is not fast-acting, but in granules, then it can be pre-diluted in 2 tbsp. warm water and a little sugar for 15 minutes or use fresh yeast 30-40g, but then add it to kefir with butter.

  5. STEP 5

    STEP 5

    Mix everything.

  6. STEP 6

    STEP 6

We begin to add sifted flour in parts.

  7. STEP 7

    STEP 7

    Mix every time.

  8. STEP 8

    STEP 8

Knead the dough, cover the bowl with a napkin and leave in a warm place until the dough rises (about 20-30 minutes).

  9. STEP 9

    STEP 9

Pinch off a small piece of dough and knead it with your hands into a flat cake on a table sprinkled with flour.

  10. STEP 10

    STEP 10

Let's prepare the filling - I have two types.

  11. STEP 11

    STEP 11

Place a heaping tablespoon of filling in the middle of the flatbreads.

  12. STEP 12

    STEP 12

We form the pies, tightly pinching the edges.

  13. STEP 13

    STEP 13

Place the pies on a baking sheet, seam side down, and let rise a little while the oven preheats.

  14. STEP 14

    STEP 14

Beat the yolks with a fork.

  15. STEP 15

    STEP 15

Grease the pies with yolk using a silicone brush and place in the oven.

  16. STEP 16

    STEP 16

Bake for 15-20 minutes at 200 degrees.

  17. STEP 17

    STEP 17

    Our pies are ready!

  18. STEP 18

    STEP 18

This is what they look like in cross section.

  19. STEP 19

    STEP 19

    Bon appetit!

The pies turned out to be so neat and ruddy, it’s a pity there’s no cutaway photo to see how the dough rose, here the recipe is shown even faster

The pies turned out very tender! The dough is so airy, even the next day the baked goods did not harden at all. In short, I recommend it to everyone!!!

Oh, by the way, if anyone is interested, I’ll tell you about the filling for my “fluffy” pies. There were two of them. One is sauerkraut with herbs (I first stewed it a little with butter), and the other is cheese, green onions, dill and a raw egg (so that everything sticks together properly). Both turned out very successful

Kate! Wonderful pies! I just want to crush them, I could swallow them all in a second! Soft, tender, so delicious. You are truly a master. I’m taking it to the Cookbook and will bake it.
