After cutting the meat, I was left with a skin with a layer of fat and meat. I decided to divide it in half and from one part cook a pork roll in onion skins. I used to boil cheeks in the husks, it was delicious. And this roll did not disappoint me either. It turned out to be very soft, with a delicate skin. Before starting cooking, I washed the pork skin with water and wiped it dry. Then I salted the inside, added curry, dried parsley and a mixture of peppers. I grated the garlic and rubbed it all into the meat and lard. I twisted the roll, tied it with twine and put it in a dark pan (so as not to stain). I added onion peels, allspice, mustard seeds and additionally took frozen dill umbrellas. The aroma during cooking is amazing! My roll took two hours on low heat. Great snack! After cooling, the roll is well cut into pieces. Very tasty, I recommend it!
