STEP 1

How to make pine syrup (pine honey) from pine shoots? Young pine shoots need to be collected in the spring, when they have begun to grow, but are not yet covered with young needles. It is best to do this in a young pine forest. Depending on the region, pine shoots are collected in May–June. Just don’t cut off the shoots from the tops of the pine tree. Allow the tree to grow normally. Cut shoots on the side branches. There is no need to cut off all the shoots that you can reach.
STEP 2

It is enough to take the tops of two to three side branches from each pine tree. Clean the cut young shoots of debris and remove any needles. Transfer the shoots to an enamel or stainless steel pan and cover with water. Place the container for preparing pine honey on the stove, bring to a boil and simmer over low heat for about 20 minutes, then remove from the stove and cover with a lid. Leave the broth to infuse for a day.
STEP 3

The decoction has a pleasant pine resinous aroma and a slightly bitter taste. After a day, strain it through a fine sieve or cheesecloth, add sugar and put on fire. After bringing to a boil, reduce the heat to low and simmer for about 30 - 40 minutes until the pine honey begins to thicken. Add lemon juice or citric acid to prevent the syrup from becoming sugary later, and cook for another 3-4 minutes.
STEP 4

The result is a not very thick syrup of a pleasant yellow color, reminiscent of real honey. It has a very pleasant pine scent. Pour pine honey into a clean jar and cover with a lid. Pine honey is primarily a medicine. It should be consumed in moderation - one tablespoon for an adult, one dessert spoon (or two teaspoons) for a child.
STEP 5

Pine syrup is also an excellent preventive measure that helps avoid health problems. Pine honey from young pine shoots is ready. Bon appetit and good health!
