Peasant soup with cereals
Step-by-step preparation
STEP 1
How to cook peasant soup? Prepare your food. It is better to take a special soup chicken, it is tastier for broth. But a regular broiler will also work. I cooked soup with millet. Rice, pearl barley, and egg are also suitable. Just keep in mind that the cooking time for each grain is different. For greens, take dill or parsley.
STEP 2
Pour clean cold water into the pan. Place the chicken in the water; it’s easier to cut it into pieces. Place the pan with the chicken over low heat. Bring the water to a boil and skim off the foam with a slotted spoon. Keep the heat to low. Cook chicken for 30 minutes, soup chicken for longer, 1.5-2 hours. Then remove the chicken and cool slightly.
STEP 3
While the broth is cooking, prepare the other ingredients. Sort the millet, removing debris and red grains. Then rinse the cereal thoroughly under cold running water.
STEP 4
Cut the peeled potatoes into small pieces.
STEP 5
Place potatoes and millet into broth. Add salt. Bring the soup to a boil and simmer for 15 minutes.
STEP 6
Finely chop the greens.
STEP 7
Remove the meat from the bones and cut it into small pieces.
STEP 8
Put meat in the soup, add herbs. Cook it for another 2-3 minutes. Peasant soup with cereal is ready.
