Step-by-step preparation
STEP 1
How to make parvarda sweets at home? Prepare your food. Instead of lemon juice, you can take a drop of citric acid or vinegar, but with lemon it will turn out more natural.
STEP 2
Before starting cooking, prepare the dishes. The syrup will cook under your close attention, so it's best to have everything ready in advance. I took a bowl, but I advise you to take something with a wider bottom, like a flat bowl, so the syrup will cool faster. Grease the bottom and walls of the dish with vegetable oil. Please note that the syrup is very hot; the dishes must be able to withstand high temperatures.
STEP 3
To help the syrup cool faster, you will need a bowl of ice water. Pour cold water and throw ice cubes into it. The bowl should be larger than the bowl for the syrup, keep this in mind.
STEP 4
In a thick-bottomed saucepan, combine sugar and water, add lemon juice.
STEP 5
Place the saucepan on the stove and turn on medium heat.
STEP 6
Bring the syrup to a boil, stirring occasionally to dissolve the sugar. Reduce the heat and cook the syrup without touching it. The goal is to reduce the syrup by almost half. This will take about 20-30 minutes.
STEP 7
Towards the end of the time, start checking the readiness of the syrup. To do this, drop the hot syrup onto a saucer. Wait a little until the droplet cools down. The drop of the finished syrup does not spread and you can easily form a ball out of it with your fingers. You can also determine readiness by color - the syrup will take on a beautiful caramel shade.
STEP 8
Place the syrup mold on a bowl of water. Pour hot syrup into it. Wait a little, a couple of minutes. And with a spatula, roll the edges of the hardening syrup towards the center. It is also better to lubricate the spatula with oil beforehand. Roll the mixture until it comes together into a ball.
STEP 9
Sprinkle flour on the board. Place the resulting lump of syrup into the flour. Roll it on all sides. And begin the pulling process.
STEP 10
Stretch the warm mass into a long thread, then fold it and pull it out again. Gradually it will begin to cool, become harder and acquire a beautiful pearlescent hue.
STEP 11
When the caramel is hard enough, shape it into a sausage. Use a knife to cut it into small pieces. Dredge the pieces thoroughly in flour and leave them to sit for an hour.
STEP 12
During this time, the pieces will completely harden. Use a sieve to remove excess flour. The candies are ready! Bon appetit!
