    Place the eggplant halves on a plate and microwave. Cook them for 3 minutes at 750W. If your maximum power is less, then increase the baking time. Carefully remove the pulp from the baked eggplants with a spoon, being careful not to damage the walls and bottom of the vegetable. Place the pulp in a bowl.

    Cut the cheese into small cubes - then it will melt faster and better. Any cheese is suitable for this dish - hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. Place the chopped cheese in a bowl with the eggplant pulp.

    Wash the tomato and also cut into cubes. Transfer it to the bowl with the filling.

    Squeeze a peeled clove of garlic through a press. Add mayonnaise. Salt and pepper the filling to taste. Keep in mind that it already contains salted cheese and mayonnaise. Stir.

I love eggplant in any form. I liked this recipe for its ease of preparation. It turns out that you can cook a complete meal using a microwave without any hassles. First, I washed the eggplants, cut them in half, made slits and sprinkled them with oil as described in the recipe. I cooked vegetables in the microwave for 5 minutes with a power of 700 W. I took out the middle with a spoon, cutting in places with a knife. For the filling, I combined eggplant pulp, garlic, yellow tomato, cheese, mayonnaise and pepper. I stuffed my eggplant boats and baked them in the microwave for 7 minutes until fully cooked. It turned out just a masterpiece! Tender, soft, aromatic, amazingly tasty. Garlic and pepper added a spicy kick. The cheese melted perfectly, the vegetables were well baked. Yes, there was no golden brown crust, but it still turned out amazingly delicious.
