Meringue Snowmen

STEP 1

Necessary products.
STEP 2

Separate the whites from the yolks.
STEP 3

Add sugar. The ratio of protein and sugar should be 1:2, i.e. There is twice as much sugar by weight as protein.

Mix the whites with sugar with a whisk and place in a steam bath. Stir the mixture with a whisk all the time for 5 minutes until the sugar crystals disappear.
STEP 5

The protein mixture will have a temperature of about 60 degrees. Beat the meringue with a mixer.
STEP 6

Beat the meringue until it cools and acquires a dense consistency, white color, gloss, and the grooves from the mixer remain clear. About halfway through the beating process, add lemon juice.
STEP 7

Divide the meringue into three parts - leave one part white, tint the second with a small amount of blue gel dye, and the third - tint a little more to obtain a deeper blue color.
STEP 8

Place the meringue into three piping bags.

You can further decorate the snowmen by painting their faces using gel food coloring.
