STEP 1

MERINGUE: The right products.
STEP 2

Beat the egg whites with juice or acid at low speed until foam forms. When foam appears, increase speed to maximum. Add sugar little by little and beat in a mixer for 10 minutes.
STEP 3

When the whites are beaten, transfer them to a pastry bag, in which make a hole with a diameter of 5 mm.
STEP 4

Place “swan necks” in the form of “twos” 2.5 cm wide and 5 cm long from a pastry bag onto a baking sheet. Using a wooden stick, draw out the “swan beaks”. Make “wings”: pipe meringue into circles with a diameter of 4 cm and spread half of the circles to the right side and half to the left with a teaspoon. Sprinkle the meringue with powdered sugar. Place the meringue in the oven, dry at 100 degrees for 1 hour, then leave in the oven to cool for 1 hour.
STEP 5

You can make “wings” with a special attachment, drawing “feathers”.
STEP 6

BUTTER CREAM: The right products.
STEP 7

The cream must be cold; for this you need to put it in the freezer for 15 minutes. Beat cream with powdered sugar.
STEP 8

SWAN CAKE: Transfer the cream into a pastry bag. Using the star tip, form the cream into shells.
STEP 9

Attach the wings and insert the necks.
STEP 10
