STEP 1

How to make khachapuri from lavash with cheese in the oven? To begin, prepare all the necessary ingredients according to the list. Kefir is suitable for any fat content, but the fattier the kefir, the tastier the khachapuri will be. You can select combinations of cheeses to suit your taste. I have cheese and suluguni. STEP 2

In a bowl, combine kefir, eggs and salt. Whisk until smooth.
STEP 3

Grate the suluguni on a coarse grater. You can replace Suluguni with mozzarella or other cheese that melts well.
STEP 4

Crumble the cheese into small pieces with your hands or grate it on a coarse grater. You can replace feta cheese with feta or other pickled or soft cheese.
STEP 5

Cut a square from the pita bread slightly larger than the baking dish. From the rest of the pita bread, cut out 2 circles with a diameter slightly smaller than the baking dish.
STEP 6

Tear the lavash scraps into small pieces with your hands.
STEP 7

Dip small pieces of lavash into the kefir-egg mixture.
STEP 8

STEP 9

Place some grated cheese of both types on the pita bread. Place a round sheet of pita bread on the cheese. Sprinkle some of the grated cheese and suluguni on top. Place pieces of lavash soaked in kefir mixture on top of the cheese. Repeat the layers of cheese and soaked pita bread a couple more times. Leave a little suluguni to decorate the top.
STEP 10

Grease the edges of the pita bread with the kefir mixture to make them more elastic, fold them inward and lightly press them against the filling. Place a second round sheet of pita bread on top and brush it with the remaining kefir mixture.
STEP 11
