    In a bowl, combine kefir, eggs and salt. Whisk until smooth.

    Place some grated cheese of both types on the pita bread. Place a round sheet of pita bread on the cheese. Sprinkle some of the grated cheese and suluguni on top. Place pieces of lavash soaked in kefir mixture on top of the cheese. Repeat the layers of cheese and soaked pita bread a couple more times. Leave a little suluguni to decorate the top.

    Grease the edges of the pita bread with the kefir mixture to make them more elastic, fold them inward and lightly press them against the filling. Place a second round sheet of pita bread on top and brush it with the remaining kefir mixture.

Today I wanted something quick and tasty. The recipe for khachapuri made from lavash with cheese in the oven fits perfectly into the concept. I bought 300 g of lavash. The first sheet was used for a square for the base, the second for circles, the remains of the sheets were soaked in kefir with eggs. If your cheese is very salty, like mine, it is not necessary to add salt to the mixture with kefir. I had homemade cheese, you can throw less of it, but more suluguni, because... The pita bread is also salty. I mistakenly put the last circle not on the top of the dish, but in the envelope itself, so the edges of the square unfolded and crunched. Don’t repeat my mistake and place the circle straight on the ends, otherwise it will dry out and be tasteless. When hot it is not critical. Although I doubt that even a crumb will remain. We dared everything in a moment! It was delicious!

Yesterday I made khachapuri from pita bread with cheese in the oven according to your recipe. I took mozzarella cheese, I took more, 250 g, I took less cheese - 100 g. I did everything else according to the recipe. It turned out VERY tasty and fast. The next day it tastes just as good as straight out of the oven. Thanks for the recipe!!!
