How to freeze berries

STEP 1
For freezing, take well-ripened berries. Select large and dense berries in order to freeze them separately, and small and softer ones can be ground. Overripe berries should not be frozen. Only those collected on that day are suitable for freezing. One that has been left in the refrigerator for even 24 hours will lose some of its vitamins, wither, and darken. Sort the berries and remove any crushed ones. There is no need to wash freshly picked berries before dry freezing.
STEP 2
There are several popular freezing methods: IN WHOLE VIEW - Spread the selected berries and hold them on a tray for a while so that the little pests scatter. Then cover with film and place in the freezer for several hours. After the berries have frozen, they should be poured into containers with a tight-fitting lid or into plastic bags with a zipper. Write the label and put it in the freezer for long-term storage.
STEP 3
You can make tasty and healthy PUREE. To do this, rinse the prepared berries under cool running water.
STEP 4
Sprinkle with sugar for 1 kg of berries: 100-200 g of sugar./ If you add more sugar, the puree in the molds will not freeze, but in bottles it will freeze slowly/.
STEP 5
Grind with an immersion blender and stir. Let stand, stirring until the sugar is completely dissolved.
STEP 6
Then pour into small plastic bottles with a wide neck, fill not reaching 1 cm to the top. Alternatively: pour into silicone muffin tins /take new ones or degrease well/ and into the freezer. Transfer each frozen puree into an individual PE bag, then into a common PE freezer bag or container. Labeling and long-term storage.
STEP 7
WHOLE BERRIES IN PUREE: This is a good way to freeze raspberries. The berry also needs to be cleaned of debris and washed, despite the fact that the berry is very delicate. Sprinkle sugar per 1 kg of berries: 100-200 g of sugar and stirring until it dissolves. Ripe berries will turn into puree without the use of a blender or masher, while slightly unripe ones will remain intact. Continue as described above.
STEP 8
This way you can freeze not only berries, but also vegetables and fruits too. I grate the pumpkin, put it in portions into bags and freeze them in piles. I cut the ripe bell pepper into strips, place it in a bag in a disposable tray and place it flat in the freezer. You can also freeze tomatoes, zucchini, eggplant, radishes... As long as the freezer capacity allows it!
STEP 9
How to properly defrost berries: Rinse whole berries with cold water in a colander, drain and leave at room temperature. Mashed potatoes, jelly - defrost on the middle shelf of the refrigerator. Is it possible to defrost in the microwave? Yes, in fast defrost mode. Check to see if the berries have thawed every minute. /I prefer the natural process/.
STEP 10
Where are frozen berries used? You can make fruit drinks, compotes and jelly from frozen berries. They are used as a component for dairy and alcoholic drinks, smoothies. They serve as the basis for creating creams, sauces, mousses, and jellies. Ideal for making ice cream and sorbet. They can be used to stuff pancakes, dumplings, pies and pies, muffins, cottage cheese casseroles... But they are not suitable for decorating cakes and desserts, or for fruit salads.
