Homemade salted caramel - caramel sauce

Ingredients
Step-by-step preparation
STEP 1

How to make homemade caramel sauce? Let's prepare the products. Take the thickest cream.
STEP 2

Place the cream on low heat; bring it to a boil, but do not boil.
STEP 3

Next we will melt the sugar. This should be done in a bowl with a thick bottom, I have a saucepan, you can take a cast iron frying pan or cauldron. Pour sugar into a saucepan and place it on low heat. Now you need to be patient and wait until it starts to melt. You can’t stir, you’ll get a lollipop, you can only shake the pan slightly.
STEP 4

When almost all of the sugar has melted and acquired a caramel color, take a wooden or silicone spatula and stir it vigorously to melt all the crystals. Remove from heat. I burned the sugar a little, it’s better to remove it with a lighter caramel color.
STEP 5

Immediately add butter to the melted sugar. The caramel will start to bubble, don't be alarmed, but be careful. Stir well until the butter melts. This is a matter of one minute, because the sugar is very hot.
STEP 6

The next step is to pour hot cream into the caramel. Return the pan to the heat and pour them in a thin stream in several additions, working with a spatula all the time. Add salt. The mass is actively seething and may begin to spit. Be careful!
STEP 7

When all the cream is poured in and mixed well, leave the caramel to cook for another three minutes. Don't forget to stir! Then remove from heat and cool.
STEP 8

Pour the cooled salted caramel into a jar and store in the refrigerator. From this amount of products I got this jar.
