Pour sugar into a saucepan and place it on low heat. Now you need to be patient and wait until it starts to melt. You can’t stir, you’ll get a lollipop, you can only shake the pan slightly.

    When almost all of the sugar has melted and acquired a caramel color, take a wooden or silicone spatula and stir it vigorously to melt all the crystals. Remove from heat. I burned the sugar a little, it’s better to remove it with a lighter caramel color.

    Immediately add butter to the melted sugar. The caramel will start to bubble, don't be alarmed, but be careful. Stir well until the butter melts. This is a matter of one minute, because the sugar is very hot.

    The next step is to pour hot cream into the caramel. Return the pan to the heat and pour them in a thin stream in several additions, working with a spatula all the time. Add salt. The mass is actively seething and may begin to spit. Be careful!
