Almost every people of the world living in northern and temperate latitudes has such solemn dates, the end of the season of hard summer work and the beginning of a series of holidays and rest. It was at an agricultural fair that I learned this recipe, which I am now happy to share with everyone. Many people try it, and then often cook it over and over again: on holidays and weekdays, in good weather and on rainy days, and even for the New Year’s table.
