    Stuff the cooled pork with pieces of pineapple on top and generously coat all sides with sweet mustard sauce. You can also use canned pineapple rings, which you can simply place on top of the pork.

Remove the pork from the oven and cut into thin slices. I usually serve with roasted vegetables such as turnips, potatoes, carrots and bell peppers. This smoked pork has a tender and juicy flavor. A simple way to prepare, but the end result is a great holiday dinner!
