STEP 1
How to make lemon and sugar grated through a meat grinder? Prepare the necessary ingredients. Bright yellow lemons with thick peel can be replaced with Abkhazian ones. They are thin-skinned, almost orange in color and are also perfect here, especially since their smell is simply excellent! To begin, wash the lemons thoroughly under running water. And then pour boiling water over them. With this simple manipulation, the zest will release more flavor.
STEP 2
Cut off the ends of the lemons on opposite sides, cut the fruit into pieces and remove all the seeds. If you leave lemons with seeds, the dish may taste bitter later on. Plus, even grated bones will still remain hard and will be felt in the finished dish.
STEP 3
Lemons are usually rubbed through a meat grinder. This way the structure of the lemon mixture will be more uniform, in my opinion. But you can also use a blender. If you use an immersion blender, the mass will more closely resemble a classic puree, but pureeing in this way will take much more work, because lemons have very hard peels.
STEP 4
Add sugar to the grated lemons and stir. Cover the bowl with cling film and refrigerate for at least two hours. During this time, the sugar should have time to melt.
STEP 5
After this time, stir the grated lemons again and make sure that the sugar has completely melted. After which the dish can be transferred to a clean container with a lid (jar or food container) and stored in the refrigerator. Bon appetit!
