Homemade grape vinegar. Fermentation times may vary. Ideally 22-30 degrees. I make this vinegar every fall. It runs out quickly, relatives sort it out.

    Cover the jar with a wine lid, pour water into the lid. Place it in a warm place for 2-3 weeks to ferment. Every day we stir our future vinegar and add water to the lid. Until it stops fermenting.

I made grape vinegar at home using this recipe. Yes, the process of fermentation and settling is very long, but the cooking process itself is very simple. The only annoying thing was that you had to stir it every day for three weeks. Honestly, I sometimes forgot) I prepared vinegar for testing from 1 kg of grapes. I took homemade, large, blue grapes. I crushed the grapes with a blender. The container needs to be high, it splashes a lot. I mixed warm water with sugar and yeast and combined it with the grape mass. I poured it and left it for the specified time. The smell was certainly not very good. After 3 weeks, I strained the mass through cheesecloth. It turned out to be 1 liter. I left it on the windowsill and after a week the sediment settled to the bottom. The vinegar has acquired a beautiful and rich color, I won’t say that it is transparent, but not cloudy either. Tastes like real store-bought wine vinegar. It is sweet and sour and aromatic. The taste is very rich! I will store the vinegar in glass jars in the kitchen. I will use homemade grape vinegar for sauces, marinades, and meat dishes. Great recipe! Many thanks to the author!

If you prepare vinegar according to this recipe, then when you ferment the raw materials under a wine lid, that is, without air access, you will get wine, of poor quality in this case. Vinegar is made with the wort exposed to air, so that the alcohol resulting from wine fermentation is fermented into vinegar under the influence of atmospheric oxygen.
