Cognac is needed to dissolve vanillin. If you use vanilla sugar, you don't need alcohol. The cognac is not noticeable in the baked goods at all. The sauce saturates almost the entire bun and it becomes sweet due to the sauce. Although you can pour honey on it afterwards.
