Dough made with live yeast
Ingredients
Step-by-step preparation
STEP 1
How to knead yeast dough with live yeast? Prepare all the necessary ingredients..When purchasing yeast, pay attention to the expiration date. They should be stored in the refrigerator. Color and smell are very important: good fresh yeast will have a creamy color and a slight, unobtrusive smell. If you run your finger, the surface remains dry and does not crumble. Vegetable oil can be used, either sunflower or olive, if desired.
STEP 2
Heat the water to a temperature of 35-40°C. If you don’t have a cooking thermometer, then you can easily determine the desired temperature literally by hand: you need to drop a drop of water on the inside of your wrist. If the feeling is pleasant, not cold or hot, then the temperature is correct. Already at 45°C the yeast becomes uncomfortable and works more slowly, and at 50°C they begin to die. Therefore, the most important point when working with dough is not to kill the yeast at the very beginning.
STEP 3
Pour warm water into a deep bowl, add sugar and crumble the yeast. Stir everything thoroughly until the yeast is completely dissolved.
STEP 4
Sift flour (premium grade) into a bowl with the yeast, add salt and vegetable oil. Thanks to sifting, the flour will be saturated with oxygen, and the dough will turn out more tender, and the finished products from it will be softer and fluffier.
STEP 5
Knead soft dough. First, you can mix everything with a spoon, and then, as it thickens, knead it with your hands. If you have a food processor or mixer that can be used to knead the dough, you can use it. Knead the dough for about 7 minutes until all ingredients are completely combined. At first it is very sticky to your hands, but gradually begins to move away from the walls of the bowl. If necessary, you can add 1-2 tbsp. l. flour. The finished dough is slightly sticky.
STEP 6
Cover the dough with a towel and leave warm for 1 hour. This dough rises very quickly. Therefore there is no need to keep it longer.
STEP 7
The dough with live yeast for pies is ready. Bon appetit!
