    How to make honey from dandelions? Prepare all the indicated ingredients. To do this, you must first pick the flowers themselves. This should be done on a dry sunny day from morning until lunch - at this time the dandelions bloom. Pick only yellow flowers, not white, fluffy ones. For 350-400 ml of dandelion honey at home you will need at least 50 flowers.

    Tear off the stems of the flowers and wash them in water. Using scissors, cut off only the yellow part of the flower - the petals - from the buds. They will give the dessert the desired yellow color. Try to cut carefully so as not to add the bitter green part of the bud, but if a little gets in, it's okay.

    Place the flower mass in a cauldron or saucepan, fill with water and add 1-2 pinches of citric acid. This ingredient must be added - it will “fix” the color, give the honey a lemony flavor and prevent the granulated sugar from caramelizing again. Place the container with the flower mass on the stove, turn on maximum heat, bring to a boil and simmer for about 2-3 minutes. This time is more than enough for the liquid to turn yellow.

    Strain the contents of the container through a fine strainer, removing the pulp completely. Throw away the pulp - it will no longer be needed in the recipe.

    Pour granulated sugar into the liquid and place the container on the stove again, turn on medium heat. Bring to a boil and simmer until liquid is reduced by half, about 30 minutes. Without adding citric acid, the sweet mass will become sugary.

    When the dandelion honey has reduced and really looks like liquid caramel, turn off the heat, but do not let it cool in the container!

    Pour the sweet mass into a jar or other container with a lid, but not into a plastic one, and place in the cold. As it cools, the honey will thicken even more and become viscous and dense.

    When this happens, bring the treat from cold to warm and serve with tea, not forgetting to cut the aromatic lemon. This honey can be added to various desserts, used to create marinades, smoothies, and drinks. Bon appetit!

Therefore, I increased the amount of ingredients; it’s good that it’s easy to do on the website. Following the recipe, I made dandelion jam. The aroma during cooking is simply magical! I poured the honey into jars and rolled it up. I let it cool in an inverted position, wrapped in a blanket. A little dandelion honey was left for testing. I didn’t expect that dandelions could make real rich floral honey. It turned out very tasty! However, it’s worth mentioning right away that I did overexpose the honey on the stove. I cooked it for 30 minutes, it seemed to me that it was quite liquid, but as it cooled it became very dense. I advise those who are brewing this honey for the first time to keep it on the stove for 20 minutes, and then pour it into sterilized jars. But after the first attempt, if the honey turns out to be very liquid, the cooking time can be increased to 25 minutes. From this amount of ingredients I got 360 ml. very thick honey.
