STEP 1

STEP 2

Whisk the eggs until smooth. There is no need to beat the eggs vigorously, just to combine the whites and yolks. The batter will be even more airy and crispy if you first separate the eggs into whites and yolks, beat them separately, and then combine them.
STEP 4
Add vegetable oil and vodka to the eggs. Don't be alarmed by the presence of alcohol in the dish. It will completely evaporate during heat treatment. Since alcohol evaporates at a lower temperature than water, being instead in batter during frying, quickly evaporating, will make the products more airy and crispy.

Then add salt to taste, ground black pepper or any aromatic spices you like. A particularly enticing aroma can be achieved using ground nuts or cheese. Add approximately three tablespoons of flour. Flour comes in different grades and densities, so it is difficult to determine its exact amount. Look at the consistency of the batter; it should turn out like pancake dough or thick sour cream. Add more flour if necessary.

Mix the batter carefully so that there are no lumps. If the batter is too thick, you can dilute it a little with boiled cold water.
STEP 7
