STEP 1
Let's prepare the products. Let's take only the yolks of the eggs) Put the water on to heat right away, we need boiling water.
STEP 2
Separate the yolks from the whites, add sugar to the yolks and beat with a mixer. The whites won't be useful. You can use them in other baked goods.
STEP 3
While the yolks are whipping, remove the center of the vanilla pod, or add vanilla sugar (or vanilla tincture) to the cream, put on the fire to heat up, BUT DO NOT BOIL! When you see signs of boiling, immediately remove from heat.
STEP 4
Then pour in the hot cream in a thin stream, continuing to whisk the yolks and sugar.

Beat everything well.

Then the mass needs to be filtered through a sieve so that there are no lumps. Set the oven to preheat at 150 degrees.

If there is foam on top, skim it off.
STEP 8
Then pour the mixture into ceramic portion molds, not reaching the top by about 1-1.5 cm. I got 6 of these forms. Place the molds in a baking tray and pour boiling water into it very carefully so that the water reaches the middle of the molds. Place in a preheated oven for 50 minutes.
STEP 9
Here's our creme brulee. You need to remove it from the baking sheet, let it cool and put it in the refrigerator for 6-8 hours. Better even for a day. During this time, the cream will stabilize even better and become very tasty.
STEP 10
Here is a well-cooled creme brulee.
STEP 11
Before serving, you need to make a caramel crust - this is the “calling card” of creme brulee. To do this, pour 1 teaspoon of sugar into each mold, distribute evenly - just twist the mold in your hands at an angle, the sugar will be well distributed.
STEP 12
Take the burner, turn it on low and melt the sugar. It turns out to be a crust. If there is no burner, turn on the grill and place the molds under the grill in the oven, just be careful not to burn the sugar.
