How to make chocolate mousse? Prepare your ingredients. Take dark chocolate with a minimum cocoa content of 70%. Instead of cognac, you can use whiskey or brandy. Sugar can also be brown.

Break the chocolate into small pieces.

Place chocolate in a saucepan and add sugar. Pour in water and cognac.
STEP 4

Place the saucepan over medium heat. Stirring constantly, melt the chocolate. The mixture should be fairly fluid.

Pour the chocolate mixture into a bowl or bowl. Cool to room temperature.

Place ice cubes in another bowl, slightly larger.

Set the bowl of chocolate in a bowl of ice to ensure the bottom cools evenly.

Beat the chocolate with a mixer at medium speed. At the very beginning of beating, nothing happens. But as it gradually cools, the chocolate mixture will begin to thicken. Do not beat the mousse for too long, otherwise it will lose its airiness.

Transfer the airy chocolate mousse into bowls. Place the mousse in the refrigerator for 30 minutes.
