Chinese beef with vegetables

Step-by-step preparation
STEP 1
For this recipe you will need soft and tender sirloin beef. The success of the entire event will depend on the quality of the meat. So, wash the beef, dry it and cut it into small squares.
STEP 2
Transfer the beef to a bowl in which it will marinate. Salt and pepper to taste. Add 2 tbsp. soy sauce. Stir and set aside to marinate a little.
STEP 3
Wash the bell pepper and cut it into large squares. Ideally, take yellow, red and green bell peppers. This trio will look perfect in the finished dish. My green pepper turned out to be a different variety.
STEP 4
The onion must be peeled. You need to cut it as follows. Cut the onion in half, then each part into three parts and another three parts perpendicularly. In total, from each half you will get nine approximately identical squares.
STEP 5
Cut the washed and peeled ginger root into small strips.
STEP 6
Peel the garlic and, flattening it with the flat side of a knife, finely chop it.
STEP 7
Let's start preparing the sauce. In a separate bowl, mix 1 tablespoon of starch (either potato or corn starch will do), water, remaining soy sauce, rice vinegar (can be replaced with apple cider vinegar) and sugar. Mix the sauce thoroughly until the sugar grains dissolve.
STEP 8
Now you need to roll the pieces of beef in starch. To do this, I pour starch into a regular plastic bag, add beef there and, holding the bag tightly, shake it, achieving uniform breading on all pieces of meat.
STEP 9
In a wok or any other frying pan with high sides, heat the sunflower oil over high heat. Once the oil is hot, add the beef to fry.
STEP 10
Fry the meat until cooked and place on a paper napkin to drain off excess oil.
STEP 11
Pour some sunflower oil into the pan again. Heat it up and add it to lightly fry the garlic and ginger root for a minute or two.
STEP 12
Add all the peppers and onions to the pan. Fry, stirring, for a few minutes until it softens a little. In Chinese cuisine, it is customary to fry vegetables not until fully cooked, but lightly, so that all the vitamins remain in their places.
STEP 13
Add the pre-prepared sauce to the pan and bring the sauce to a boil. At this point the sauce should thicken. If necessary, you can add a little more salt to the dish to taste.
STEP 14
And finally, put the slightly dried beef into the frying pan, mix everything thoroughly and let the meat warm up for a few minutes. Beef in sweet and sour sauce is ready!
