Chicken tabaka with garlic
Step-by-step preparation
STEP 1
Cut the chicken along the breastbone line and flatten it so that it fits entirely into a large frying pan. Spice up.
STEP 2
Melt the butter in a frying pan, place the chicken, back up, and fry over fairly high heat, pressing until golden brown, 5-7 minutes.
STEP 3
Turn the chicken over to the other side and cover with a heavy lid or put a weight so that the chicken remains flattened, reduce the heat and fry for 5 - 7 minutes, turning a couple of times in the process. You can determine the readiness of the bird by pricking it with a knife in the thickest place: if clear juice flows out, The chicken is ready, but if it’s pink, turn it over and fry for another 10 minutes.
STEP 4
Place the peeled garlic in a mortar, add salt and grind into a paste. You can use a blender.
STEP 5
Add 2/3 cup of water to a mortar and pour garlic sauce over our chicken.
STEP 6
Cover with a lid and cook over medium heat for 10-12 minutes. Cooking times are approximate and will depend on the size of the carcass and the utensils you use to cook.
STEP 7
Serve our chicken hot! Bon appetit!
