It seems to me that such a cream will be a little runny, I suggest you replace the egg mixture with milk and sugar with condensed milk. Firstly, it will be more correct, and secondly, it will be much faster. I studied to be a pastry chef and worked as a pastry chef for some time. If you want cream with an egg, then it’s also not prepared exactly like that. You need to separate the yolk from the white and use only the yolk. Add a little water there and put it in a water bath. Then add the condensed milk and boil until thickened. You definitely need to let it cool, and then combine it with butter that has already been whipped until white. It would be better to add cocoa powder.
