Fiesta, in general in Rus', pancakes were initially made only from buckwheat flour. They began to add wheat already during the USSR, if I’m not mistaken. In my old cookbooks, all pancakes are made only from buckwheat. Especially the pancakes with caviar that were served to the Russian Tsars.
