    Wash the carrots with a brush under running water, peel and rinse. Cut into rings of at least 0.5 centimeters, otherwise it will be overcooked and will be wadded in the salad. My carrot was plump, so I first cut it lengthwise into two equal parts.

    Pour 0.5 liters of water into a saucepan and place over medium heat. Bring to a boil, add salt. Place the chopped carrots in the water and cook for about 6 minutes. Check the readiness of the carrots by piercing a piece with a sharp knife; it should easily pierce the vegetable.     Remove from heat, drain the broth and immediately rinse with cold water. This is necessary so that the carrots stop cooking from the inside and do not become too soft. Let the water drain completely and transfer it to a bowl.

    Squeeze lemon juice into a bowl with boiled carrots, pour in vegetable oil, add salt and stir.

I made this salad out of interest, I always made it from raw carrots, but here it’s boiled. I cooked the carrots as written, six minutes after the water boiled. Then I drained the water and left the carrots in a sieve to let the water drain. I added the dressing ingredients all at once, I don’t think there’s much difference. I didn’t use chili; the dressing was spicy enough in my opinion) The salad sat in the refrigerator overnight and before dinner. The consistency of the carrots remained slightly harsh and crunchy. The taste is sharp, the lemon is a little sour, but everything is balanced. The only thing is that I’m not a fan of boiled carrots; they have a specific taste. But my husband liked it. Moreover, he came from the street, was cold, and here was a “warming” salad) In general, lovers of boiled carrots will like it, it will be very relevant during Lent.

So, it has already been proven (I was surprised myself) that boiled carrots are healthier than fresh ones! I'm on a diet, I'll definitely make this salad! I'll just add lemon instead of vinegar.
