    Prepare undercuts (belly), salt, garlic and a few sprigs of fresh or dried thyme.

    Rub the meat well with 1 tbsp. spoon of salt.

    Use a garlic press to squeeze out the garlic and rub the inside well with the garlic.

    Roll the undercut into a roll and tie with twine.

    Boil water, add the rest of the salt, place the roll in the pan and add the thyme. Cook after boiling at a very low simmer for an hour and a half.

    Cool the finished roll, place under a press until completely cooled. Remove the twine. Slice the roll thinly and use it for sandwiches.
