Bean lobio in a slow cooker

For lovers of Georgian cuisine. Spicy and delicious! One of my favorite Georgian dishes is lobio. But I don't like to cook beans. It takes a long time to cook and you need to monitor the amount of water. Now I cook this dish in a slow cooker. I don’t stand at the stove, I do other things while the miracle pot cooks.

Step-by-step preparation

Cooking timeCooking time: 3 hr 30 mins
  1. STEP 1

    STEP 1

How to make lobio in a slow cooker? Start by soaking the beans overnight. Rinse it and fill it with boiling water. Please note that beans swell and increase in size. To do this, take a deep bowl (volume 1.5 - 2 liters.)

  2. STEP 2

    STEP 2

In the morning, drain the remaining water in the bowl and rinse the beans.

  3. STEP 3

    STEP 3

    Finely chop a large onion.

  4. STEP 4

    STEP 4

In the "Frying" mode, fry the onion in vegetable oil (1 - 2 tbsp) until golden brown.

  5. STEP 5

    STEP 5

Pour the beans into the multicooker bowl and add water to 1 cm above the beans. Place bay leaf. It is more correct to remove the fried onions from the bowl first, but I cook the beans along with them.

  6. STEP 6

    STEP 6

Close the lid and set the “Soup/Stew” program for 1 hour 30 minutes.

  7. STEP 7

    STEP 7

Before the end of this time, chop 6 cloves of garlic, not very finely, and a bunch of greens (cilantro, parsley). Take tomato paste (100 g). I don't use tomato paste. In the summer I can can ground tomatoes. For this dish I take 250 ml of tomato puree.

  8. STEP 8

    STEP 8

When the program ends, add garlic, herbs, and tomato (paste or puree) to the beans. If the fried onion was removed before cooking the beans, now you need to add it too. Add spices, except red pepper, salt (1 tsp is enough for me), sugar, mix. Close the lid, again in the same mode, set the time to 1 hour.

  9. STEP 9

    STEP 9

After an hour, check the readiness of the beans. It should be soft and boiled. If there is a lot of liquid in the bowl, remove the valve on the multicooker lid and cook in the “Bake” mode for 20-30 minutes. You can evaporate the liquid with the lid open in the "Frying" mode. Be sure to make sure it doesn't burn and stir occasionally. At the end of cooking, add 0.5 tsp. red pepper. After completing the program, turn off the multicooker and let the dish brew for 20 -30 minutes.

  10. STEP 10

    STEP 10

Transfer to a separate bowl. When serving, you can sprinkle with ground walnuts.

Should you use red beans for lobio or does it not matter?

Good recipe. I tried to cook it and my wife said that it tasted better than in a Georgian restaurant. But why coriander if you already have cilantro? After all, this is the same plant.
