I made apricot compote from apricots in a 3 liter jar for the winter using this recipe. A very quick way to prepare apricots directly with pits for the winter. I picked the apricots straight from the tree, good and ripe, but not soft, so that they wouldn’t burst in the jar, but would remain intact. I placed clean apricots with pits in 3-liter jars by eye. I poured boiling water over it and left it to steep for 20 minutes as described in the recipe. I covered the jars with a special lid with holes, drained the apricot-flavored water and added sugar. I added a little less sugar than indicated in the recipe, since my apricots are very sweet. I boiled the syrup, poured it into jars and rolled it up. Everything is very simple and fast. I also put a sprig of mint in one jar for an experiment, I’ll try it in winter) The apricot compote is very tasty, rich and healthy.
