To prepare a vegetable stew with zucchini and potatoes in its simplest version, in addition to the basics, you will need the following: onions, carrots, bell peppers, tomatoes. You can supplement or replace: green beans, peas, asparagus, pumpkin, mushrooms, different types of cabbage. You can prepare the dish with or without sauce, stew, fry, bake in the oven in a mold or in portioned pots.
Vegetables can be placed in the pan at the same time raw. And use a slow cooker for this. In this case, you will only need to set the desired mode and time and wait for the sound signal. But if you first fry the vegetables in oil, it will turn out much tastier.
So, it is better to cut the potatoes into beautiful cubes, then fry them in butter until half cooked. The same with zucchini, which you add to the fried onions and grated carrots, then fry everything together for a few minutes. If the recipe includes tomatoes or pasta, they are added to the onions, salt and pepper. Next, other vegetables are prepared if desired.
At the end, everything is mixed in one pan and simmered for 5-10 minutes with the addition of water, broth or sauce. If you want a thick gravy, add fried flour to the water and stir thoroughly so that no unpleasant lumps form. Fresh herbs are placed last, or can be placed directly on the plate when serving.
