STEP 1

How to make Zhizhig galnash with chicken? You need to start preparing the dish with meat. You can take any meat according to your taste and desire. Chicken zhizhig-galnash cooks faster. We wash the chicken fillet under running water, cut it into small pieces, put them in a saucepan, fill them with cold water, put them on the fire, bring to a boil, remove the foam, reduce the heat to medium, add salt to taste and cook until tender.
STEP 2

Let's prepare the ingredients for the dumplings. Dumplings for Chechen zhizhig-galnash are made from wheat or corn flour. These dumplings do not have a strictly uniform shape; each housewife has her own, almost unique one. Dumplings are made from corn flour in Chechnya, as a rule, for the festive table, and for a regular feast from wheat flour.
STEP 3

We make dumplings. Sift the flour into a deep bowl, add salt, beat in one chicken egg, pour in cold water and knead the elastic dough.
STEP 4

You need to knead the dough with your hands; it should turn out elastic and tough.
STEP 5

Roll out the dough into a layer about 1 centimeter thick. Cut it into strips about 3 centimeters wide.
STEP 6

We cut them lengthwise into pieces 1 centimeter wide. We stretch their edges in different directions so that they curl slightly.
STEP 7

Remove the meat from the broth. Pour half of the broth into another container. You will need it to prepare the sauce. And in the remaining part we will cook dumplings.
STEP 8

Drop dumplings into the boiling broth in batches, stir immediately with a spoon so that they do not stick together and stick to the bottom of the pan. Cook the dumplings over medium heat for about 15 minutes.
STEP 9

Prepare the sauce. It's very simple. Peel and cut the garlic into pieces, grind it with salt and pour in the broth. The sauce is ready, pour it into a bowl.
STEP 10

We take out the dumplings with a slotted spoon, put them in a deep plate, put the meat on top, put the bowl with the sauce on the dish. Serve the zhizhig-galnash to the table. Bon appetit!
