Step-by-step preparation
STEP 1
Let's prepare the ingredients. This dish can be classified as simple and quick; if you soak the beans overnight, then in the morning it will take no more than forty minutes to prepare. Pre-dry beans must be washed and filled with cold water so that there is twice as much water; overnight the beans will swell and increase in volume.
STEP 2
In the morning, drain the water from the beans and rinse them again. Fill the beans with fresh cold water, put the saucepan on the fire and cook for about 30 minutes over medium heat.
STEP 3
At the end of cooking, add a little salt, cook for about 5 more minutes, until the beans are soft, but you cannot overcook them so that they do not become mushy. When the beans are ready, drain the water and rinse again.
STEP 4
Meanwhile, prepare tomato sauce. Peel the onion and finely chop it. Wash the carrots, peel and grate them on a medium grater. Heat the vegetable oil in a frying pan. Place chopped onions on it and fry until golden brown. If desired, add pre-washed and chopped fresh parsley to the vegetables. Stir and fry for about 2 minutes over medium heat.
STEP 5
Then pour the tomato paste into the pan with the herbs. Mix. Add ground black pepper and salt to taste. Pour in a small amount of water. Simmer, stirring occasionally, for about 3 minutes. Add finely chopped garlic. Stir and simmer until the sauce thickens.
STEP 6
Then add the boiled beans, mix and simmer for about 5 minutes. Turn off the heat and let the beans stand covered in the saucepan for about 10 minutes. Serve to the table. This dish is delicious both warm and cold. Bon appetit!
