    How to make rowan in sugar? Prepare all the necessary ingredients. Choose ripe berries without signs of spoilage. One kilogram of berries is quite a large amount. If you are preparing rowan for the first time, it is better to take a small amount of berries (for example, 100 grams).

    It is best to use rowan collected after the first frost, when it is no longer very bitter. If the berries were collected earlier, then soak them in salted water. Keep them in water from one day to three days, remembering to periodically change the water. This method will help make the taste of rowan less bitter. After the soaking time has passed, rinse the berries and dry them on a paper towel.

    Preheat the oven to 130-150 degrees. Prepare the syrup. Pour water into a saucepan, add sugar, place over medium heat and bring to a boil. Remove the pan from the heat. Dip the berries in the syrup for ten seconds. This is necessary so that the berries are covered with a sticky layer, thanks to which the powdered sugar will stick to the berries in the future.

    Remove the berries from the syrup and leave them on a plate to cool slightly so that the powdered sugar does not instantly melt on them. Roll rowan berries in powdered sugar.

    Place the berries in a heatproof dish (I used a cast iron dish) in one layer to help them dry better. If there are a lot of berries, then it is better to dry them in several stages. Place the rowan in the oven for 5 minutes. After this time, turn off the oven and leave the berries in it until they cool. During this time, the powdered sugar will turn into glaze.

I picked rowan berries at the dacha. I made jam from it and didn’t stop there. I became very interested in what else could be prepared from mountain ash. I liked the recipe for rowan berries in sugar. For testing I took only 100 grams of berries. According to the recipe, rowan berries need to be kept in salted water for three days. As far as I understand, this is needed in order to get rid of bitterness. To be honest, I have a hard time believing that you can somehow get rid of rowan bitterness. That’s why I didn’t soak it for so long. I made a concentrated salt solution and kept the rowan berries in it for about 10 hours. After that, I washed them and dried them with a paper towel. I followed all other steps according to the recipe. The rowan in sugar turned out bittersweet with a very pleasant aftertaste. I don't even know how to describe it. Very delicate taste, like a flower. Everyone really liked the rowan berries in sugar. Except for my daughter who has a sweet tooth. Rowan is too bitter for her. Thank you for the interesting recipe!
