    How to make Japanese mochi cake from rice flour at home in the microwave? Prepare your food. For mochi, it is recommended to use special glutinous rice flour, but this recipe works just fine with regular flour, which is sold in any store. My dyes are gel. For the filling I chose strawberries, blueberries and kiwi. This recipe requires a microwave.

    Get a microwave-safe bowl. Pour water into it, add sugar. Drop a little dye, choose the color to your liking. Stir until the color is uniform.

    Add rice flour to the water and stir until smooth. The dough will have the consistency of pancakes.

    Cover the bowl with cling film and place in the microwave. Set the power to 750-800 W, set the time to 2 minutes. The exact time and power depend on the operation of your microwave. You can read more about this in a separate article, the link is at the end of the recipe.

    Cook the dough for the specified time, then remove the bowl. The dough should thicken, it will look like plasticine. If during this time the dough remains liquid, then put it in the microwave for another 30 seconds.

    Cool the dough until warm. Divide it into the same number of parts. This recipe makes 6 cakes. Since I'm making three colors, I divide each one into 2 parts. Roll a piece of dough into a log, knead it a little on a board sprinkled with cornstarch. Then roll out into a circle, a few millimeters thick. Don’t make it very thick, as this will make the mochi difficult to seal.

    Place a little curd cheese in the center of the workpiece, and on top of it a berry, previously washed and peeled. Smaller strawberries are better; cut large berries into pieces.

    Form the mochi into a round shape and roll in starch.

    I prepared mochi in other colors in a similar manner. One had kiwi cut into pieces as a filling.

This morning my joy knew no bounds, because in my feed I saw a recipe for mochi made from rice flour at home! I've been wanting to make this cake for a very long time, but I didn't dare. But I trust this author! So I immediately went for rice flour. I measured sugar and water, combined, added rice flour and stirred with a whisk. I only had one dye - scarlet. I divided the dough into two parts and added two drops of dye to one. I placed the bowls in the microwave separately. First I “cooked” the white dough, I decided that it was 1.5 minutes at 750 W. will be sufficient. The dough turned out a bit dense in my unexperienced opinion). I cooked the second dough for 30 seconds, mixed and another 30 seconds. I think this is optimal. The red dough turned out softer. Then I slightly kneaded the lumps of dough and began to form the cakes. For the filling I used cherries and nectarines, as well as cottage cheese. I prepared the filling in advance so that the dough does not dry out. At first there were difficulties with the formation, but then I realized that there was no need to roll it out thinly. I think next time I’ll make these products smaller and in the form of a pie)). I liked the mochi! They have such an unusual taste and consistency. Rice dough is very similar in plasticity to children's play dough). It is soft, tender, viscous, and it is a pleasure to sculpt from the dough. The taste is pleasant, sweetish.
