STEP 1
How to make a rabbit in a cauldron over a fire? First of all, prepare the meat. Cut the rabbit, cut into portions and fill with cold water. To avoid any foreign smell, the meat needs to be soaked for some time, periodically changing the water. I had the carcass of a young rabbit, so I soaked it for a short time, about two hours.
STEP 2
At this time, work on the rest of the products. Use the amount of onion and garlic to taste. The more onions there are, the juicier and brighter the finished dish will be. Peel the onion and garlic. Rinse and dry.
STEP 3
Light a fire and set up a cauldron. Pour in vegetable oil, heat it, and use a slotted spoon to pour hot oil over the edges of the cauldron. Dry the rabbit pieces with paper towels to remove excess water. Place the meat in the cauldron. Stirring continuously, fry the pieces over high heat until golden brown. Remove a few logs from under the cauldron to make the flame moderate, add a little water to the meat and simmer under the lid until cooked.
STEP 4
At this time, cut the onion into thin rings or half rings. Chop the garlic as desired.
STEP 5
When the rabbit is ready, add the onions and garlic to the cauldron.
STEP 6
Add a couple of logs to increase the flame and, stirring, cook until the onion is translucent. Add salt to taste.
STEP 7
Add sour cream to the cauldron.
STEP 8
Mix everything and cook for a couple more minutes. At the end of cooking, add ground black or allspice. You can also add finely chopped greens if desired.
STEP 9
Ready! Serve hot.
